The dishes are made with fresh produce, for a gastronomical journey in the Caribbean.

Green Fig & Salt Fish

Saint Lucia

Saint Lucia locals eat Green Fig & Salt Fish all year, typically on weekends. Green figs are for them what potatoes are in Europe or in North America.

The salt fish in the dish is mainly salt cod with a garnish of banana and a side salad of grated cucumber or lettuce, tomato and avocado.

You will be amazed at the beauty and incredible taste of this dish : it's the bee's knees !

Bandera Dominicana

It will be separetely served with meat in a plate, rice mixed with red beans with a garnish of mixed salad composed of tomatoes, lettuce, cucumber with/or avocado to please everyone's taste.

Haitian Griot

Haiti

The famous Haitian « Griot » is one of the most popular dishes in Haiti prepared with pieces of pork meat macerated in a spicy marinade, then fried or baked.

« Griot » is often served with sticky rice (or « djon-djon rice »), and with plantain.

It's a real delight ... crispy from the outside and tender on the inside, the pieces of meat almost melt in your mouth !
